Apple Pecan Salad
Labor Day has always seemed like a bookend or exclamation point to the summer. Granted, in Texas, it's still pretty hot but Texans can feel the relief of fall just around the corner.
This salad feels like the perfect dish for Labor Day. The cold, creaminess of the cream cheese and Greek yogurt are a refreshing reminder of the closing summer days while the crisp, tart apples and sweet, soft pecans are an enticing "come hither" to fall. Apple Pecan Salad
Ingredients:
4 oz. low-fat cream cheese, softened
1 c. Greek yogurt, vanilla
1 tsp. vanilla
dash salt
¼ c. sugar
3-4 Granny Smith apples, cored and diced
Streusel Topping:
2 T. brown sugar
2 T. pecans chopped
Directions
1) Mix cream cheese and Greek yogurt until smooth and creamy.
2) Add vanilla, sugar and salt. Mix until combined.
3) Toss diced apples with cream mixture.
4) Place in serving bowl.
5) Just before serving sprinkle the top with brown sugar and pecans.
