1. Remove seeds from the serrano chiles, peel garlic clove and place in a large pot of water—bring to a boil.
2. Cut tomatoes into quarters.
3. In a blender, combine the tomatoes, garlic salt, serrano chiles, garlic clove and water. Blend until smooth—about 1 minute.
4. Slice beef and onions into ½-inch by 2-inch strips.
5. Preheat a large frying pan over medium heat and add 2 tablespoons of cooking. Add onions to the pan and cook until they start to brown— about 6-7 minutes.
6. Remove onions from pan and add another tablespoon of cooking oil to the same pan.
7. Add the beef and cook until the beef releases juice, and most of it evaporates—about 6-7 minutes.
8. Return the onions to the pan and mix with the beef. Pour blended sauce over beef and onions.
9. Reduce heat and let simmer until sauce has reduced little liquid remains— about 15 minutes.
