- Preheat the oven to 350 degrees Fahrenheit.
- Peel the apples, removing the cores, and cut into 10-12 pieces.
- In a saucepan, place the apple pieces and the fresh blackberries, and just enough boiling water to cover the bottom of the saucepan. Add in 1/2 tsp cinnamon and simmer for ten minutes.
- In another small saucepan, place the coconut oil, maple syrup and 2 tsp cinnamon over gentle heat, until the coconut oil is melted.
- While the coconut oil mixture is melting, place the almonds into a food processor, blending until it produces an almond flour. Place this almond flour into a bowl and add in the oats.
- Once melted, add the coconut oil mixture into the oats and almond flour, stirring until all dry ingredients are covered.
- Place the soft fruit into the bottom of a baking dish, layering the oat mixture on top. Bake for 25-30 minutes, or until the topping is nicely browned.
- Serve with vanilla ice cream, or by itself, and enjoy.
