Step 1
Line an 8x8 pan with parchment paper. Sprinkle granola evenly on the bottom of the pan, so it covers the bottom.
Step 2
Drain cashews first, then add the soft cashews to a food processor or high-powered blender, along with the coconut cream, blending until smooth. Scrape down sides of processor as you go, and pulse until mixture is smooth.
Step 3
Add bananas, and pulse until mixture has an ice cream-like consistency. Add frozen blueberries and lemon juice, pulsing until everything is incorporated. Mixture can be as chunky or smooth as you like.
Step 4
Scoop mixture on top of granola (it will be thick!), and carefully smooth the fruit mixture evenly over granola. Top with more blueberries and toasted coconut.
Step 5
Freeze for 1 hour. Slice into bars. Store bars in the freezer. Remove to let thaw slightly before eating.
