Preparation
1. Place chocolate chips in medium glass bowl. microwave 30 seconds. Stir and microwave 15 seconds. stir until smooth.
2. Mash the avocado with a fork until no lumps are visible, then stir into the melted chocolate mixture until smooth. Stir in vanilla and salt. Place in the refrigerator to set for 20 minutes, or until slightly firm to the touch.
3. Remove mixture from the refrigerator and use a tablespoon to form chocolate into 12 balls. Place on pan lined with parchment paper. Working quickly, roll balls between the palms of your hands to create a smooth surface.
4. Place 2 tablespoons cocoa powder in small bowl and roll each truffle to coat. Serve immediately or store in the refrigerator.
