Preparation
1. Preheat the oven to 425 degrees F.
2. In a small bowl, combine breadcrumbs, Parmesan cheese, black pepper, salt, garlic powder and cayenne pepper, if desired.
3. Dip zucchini slices into milk and dredge into bread crumbs to coat both sides. Gently press crumbs into zucchini.
4. Arrange on a non-stick cookie sheet and spray lightly with a non-stick cooking spray.
5. Bake 15 minutes, turn over and continue baking until golden, approximately 10-15 minutes (being careful not to burn).
6. Allow to cool to room temperature and enjoy!
