Shredded Beef Burritos with Hatch Chiles

1. Place the beef in a large pot, season the meat all over with salt and pepper, then add enough cold water to cover it by 1 to 2 inches. Add the onion and garlic and bring the mixture to a boil, then reduce the heat to a simmer and cook for 1 hour.
2. Remove the pot from the heat. Drain the meat and let it cool. Remove and discard the onions and garlic. Use 2 forks to shred the beef.
3. Lay out the tortillas on a flat work surface. Divide the shredded beef among the 6 tortillas, piling the meat down the center of each tortilla.
4. Top each with tomatoes, lettuce, chiles, sour cream and cheese. Roll up into burritos and enjoy.
